Low carb soya pancakes

Many people all over the world celebrate 'Pancake Day' or 'Shrove Tuesday'. Whether it's because of supernatural beliefs or just an excuse to eat something yummy, pancakes are here to stay!
Below is a recipe for low-carb pancakes.
Any tips and suggestions are most welcome.
Ingredients
For to pancakes you will need the following:
2 Free range eggs.
1/4 cup of soya flour.
1/3 cup of cream.
1 Tsp. of baking powder.
1 Tbsp. of olive oil or butter.
pinch of salt.
The frying
Mix the 2 eggs, soya flour, baking powder and cream together till you are free from any lumps 'n' bumps. Add the pinch of salt, 2 if you're going for a more savoury pancake.
Heat a Tbsp. of olive oil, or a knob of butter in a shallow frying pan, once hot, add half the mix and gently swish around the pan.
With a spatula, gently lift the edges to see if the bottom is done, once the bottom has started to brown, you can turn the pancake over and cook the other side.
A minute or two should be sufficient, now flip the pancake up in the air a few times et Voila!!!! Low carb pancakes.
Repeat the exercise for the other half of the mix.
Toppings
Ricotta cheese is good spread over pancakes, as are fresh fruit and berries.
If you are treating yourself, some dark chocolate melted over the pancakes is lovely.
Substitutions/Preferences
The soya flour can be substituted for almond flour.
The cream can be: single, double, sour or yoghurt.Have a play about and see which you find the tastiest.
Nuts and seeds can be added to the mix if you so wish, my lovely Liz particularly likes sesame seeds chucked in there.

Hey, I've just tried making these as I am on the Atkins Diet and had a massive craving for pancakes- thank you, this recipe is SO easy! Do you know roughly how many carbs is in this recipe?! I found that using the double cream- like in your picture- I have to add a bit more to stop the mix from being too thick but it was lovely =] going to try it with sweetener next. It is lovely with Soya Custard too!
